Simple Recipes Using Only Pantry Staples

Having a few pantry staples on hand can help you create quick and satisfying meals without a trip to the store. This simple recipe uses common ingredients you likely already have, and it’s easy to prepare with an air fryer for a delicious result.

Ingredients

  • 1 cup dried pasta (any shape)
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 tsp dried Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese or nutritional yeast

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a mixing bowl, combine the diced tomatoes, chickpeas, minced garlic, Italian seasoning, olive oil, salt, and pepper. Stir well to mix.
  3. Preheat your air fryer to 350°F (175°C) for about 3 minutes.
  4. Place the tomato and chickpea mixture in an air fryer-safe dish or small baking pan that fits inside your air fryer basket.
  5. Air fry for 10 minutes, stirring halfway through to let the flavors blend and the liquid reduce slightly.
  6. Once done, mix the air-fried tomato and chickpea sauce with the cooked pasta.
  7. Serve warm, topped with grated Parmesan or nutritional yeast if desired.

Tips or Variations

  • If you don’t have canned chickpeas, substitute with canned black beans or kidney beans.
  • Adding a pinch of red pepper flakes can give the dish a mild heat.
  • Try using different dried herbs like basil or oregano based on what you have available.
  • For a crunchier texture, sprinkle breadcrumbs on top before air frying the sauce mixture.
  • This recipe also works well on the stovetop—simply simmer the sauce in a pan instead of using the air fryer.
