Curries are a fantastic way to bring bold flavors to your dinner table without spending hours in the kitchen. Whether you’re new to cooking or looking for a quick meal idea, these easy curry recipes will add a spicy twist to your routine. Using simple ingredients and an air fryer when possible, you can whip up delicious dishes that everyone will love.

Ingredients

  • 1 lb chicken breast or tofu, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)
  • Cooked rice or naan bread for serving

Steps

  1. Preheat your air fryer to 375°F (190°C).
  2. Toss the chicken or tofu pieces with half the curry powder and a pinch of salt. Place them in the air fryer basket and cook for 10-12 minutes, shaking halfway through, until cooked and lightly browned.
  3. While the protein cooks, heat oil in a large skillet over medium heat. Add the onion and sauté until soft and translucent, about 5 minutes.
  4. Add the garlic and ginger to the skillet and cook for another minute until fragrant.
  5. Stir in the remaining curry powder, cumin, and turmeric. Cook for 1-2 minutes to toast the spices.
  6. Add the diced tomatoes and coconut milk to the skillet. Stir well and bring to a simmer.
  7. Once the chicken or tofu is done, add it to the skillet. Simmer for 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  8. Serve the curry hot over rice or with naan bread. Garnish with fresh cilantro if desired.

Tips or Variations

  • For a vegetarian option, swap chicken with chickpeas or extra firm tofu.
  • Add vegetables like spinach, bell peppers, or peas during the simmering stage for a nutrient boost.
  • If you prefer a milder curry, reduce the amount of curry powder or add a splash of cream or yogurt before serving.
  • Using the air fryer for the protein gives it a nice texture, but you can also cook it directly in the skillet if you don’t have one.
  • Experiment with different curry powders or pastes to discover new flavor profiles.
