Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 medium zucchini, sliced
  • 1 red bell pepper, cut into strips
  • 1 cup cherry tomatoes
  • Fresh parsley for garnish (optional)

Steps

  1. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  3. Brush the chicken breasts with the spice mixture, making sure they’re evenly coated.
  4. Place the chicken breasts in the air fryer basket. Arrange the zucchini slices, bell pepper strips, and cherry tomatoes around the chicken.
  5. Cook for 15-18 minutes, flipping the chicken halfway through. Vegetables should be tender and slightly crisp.
  6. Once cooked, remove everything from the air fryer. Let the chicken rest for a couple of minutes before slicing.
  7. Serve the chicken slices with the roasted vegetables, garnished with fresh parsley if desired.
