When time is tight but you still want a tasty, light meal, simple recipes can be a lifesaver. With just a few ingredients and an air fryer, you can create dishes that are quick to prepare and easy to enjoy any day of the week.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 medium zucchini, sliced
- 1 red bell pepper, cut into strips
- 1 cup cherry tomatoes
- Fresh parsley for garnish (optional)
Steps
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Brush the chicken breasts with the spice mixture, making sure they’re evenly coated.
- Place the chicken breasts in the air fryer basket. Arrange the zucchini slices, bell pepper strips, and cherry tomatoes around the chicken.
- Cook for 15-18 minutes, flipping the chicken halfway through. Vegetables should be tender and slightly crisp.
- Once cooked, remove everything from the air fryer. Let the chicken rest for a couple of minutes before slicing.
- Serve the chicken slices with the roasted vegetables, garnished with fresh parsley if desired.
Tips or Variations
- Substitute chicken with firm tofu or salmon fillets for a different protein option.
- Add a squeeze of lemon juice over the finished dish for extra brightness.
- Try different vegetables like asparagus, broccoli florets, or sliced carrots depending on your preference.
- For a bit of heat, sprinkle a pinch of chili flakes on the chicken before cooking.
- Use fresh herbs such as thyme or rosemary in place of parsley to change the flavor profile.
