Tips or Variations
- Swap baby potatoes for sweet potatoes for a sweeter flavor.
- Add a sprinkle of Parmesan cheese to the potatoes just before serving for extra richness.
- If you don’t have an air fryer, roast vegetables in a 425°F oven on a baking sheet, turning halfway through.
- Try adding a splash of balsamic vinegar or a squeeze of lemon juice over the asparagus and tomatoes after cooking for a bright finish.
- Mix in other veggies like bell peppers or zucchini to customize your side dish.
