Simple Comfort Foods That Will Warm Your Soul

When the days get colder or you just need a little pick-me-up, comfort foods are the perfect solution. These dishes are easy to make, satisfying, and can often be prepared using an air fryer for quick and delicious results. Here’s a simple recipe to bring warmth and joy to your table.

Ingredients

  • 2 large potatoes
  • 1 cup shredded cheddar cheese
  • 4 strips of bacon
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 green onions, chopped

Steps

  1. Wash and dry the potatoes thoroughly. Pierce each potato several times with a fork.
  2. Place the potatoes in the air fryer basket. Set the air fryer to 400°F (200°C) and cook for 35-40 minutes or until tender when pierced with a fork.
  3. While the potatoes cook, cook the bacon strips in a skillet over medium heat until crispy. Drain on paper towels, then crumble.
  4. Once the potatoes are done, remove them from the air fryer and let them cool slightly. Cut each potato in half lengthwise.
  5. Carefully scoop out the inside of each potato half into a bowl, leaving a thin layer of potato on the skin to keep its shape.
  6. In the bowl with the scooped potato, add butter, sour cream, half of the shredded cheese, salt, and pepper. Mix well until creamy.
  7. Fill each potato skin with the creamy mixture, then top with the remaining cheese and crumbled bacon.
  8. Return the stuffed potatoes to the air fryer and cook at 370°F (185°C) for another 5-7 minutes, or until the cheese is melted and golden.
  9. Garnish with chopped green onions before serving.

Tips or Variations

  • For a vegetarian option, skip the bacon and add sautéed mushrooms or caramelized onions instead.
  • Try different cheeses like mozzarella or pepper jack for a new flavor twist.
  • If you don’t have an air fryer, these potatoes can be baked in a conventional oven at 400°F (200°C) for about 45 minutes initially, then broiled for the cheese topping.
  • Adding a pinch of smoked paprika or garlic powder to the potato mixture can add extra depth of flavor.
